On August 23, at 7 p.m., all truffle connoisseurs and the truffle-curious are invited to Ristorante Flavore, where a unique five-course dinner will take place, the star of which will be the world’s most sought-after mushrooms – the truly luxurious and delicious truffle! Irresistible truffles feature in snacks, appetisers and main courses prepared by two truly talented and skilled chefs – Kārlis Rūdolfs Aiše, head chef of Ristorante Flavore, and Sergejs Siporovs, who has honed his experience and skills in Michelin-starred restaurants.

On this evening, it doesn’t matter whether you are already a real truffle expert or taking your very first steps on this path. Either way this dinner will be memorable and experiential. Come and enjoy the experience and have a good time with your sweetheart, family, or friends.

At dinner, the guests are presented with truffle-based dishes from both chefs, which they themselves describe as follows.

Truffle elevates any dish to the next level – it can turn a completely ordinary vegetable like a potato into a real gem. Truffles are not easy to find, and people have loved them for thousands of years, searching for them even with the help of dogs and pigs, which makes them all the more desirable.

My starter a potato and leek cream soup with crispy guanciale, quail egg, roasted leek and truffle oil. With this dish, I want to illustrate how something very delicious and special can be created from very simple ingredients by adding a hint of truffle. For the main course, I offer duck tortelli with pecorino and truffle foam – a superb combination of flavours that will not leave anyone indifferent. My dessert, truffle ice cream, is definitely an unusual way to bring truffles to the table! I believe this unique dinner will be a real treat for truffle-loving gourmets! I am certain here everyone will find inspiration to boldly add truffles to their dishes in their own homes and kitchens.

I love using truffles in my dishes because of their strong aroma and delicious taste. In our restaurant, we use only the best quality truffles, which arrive directly from our supplier in Italy.

At the truffle dinner, I have the pleasure to prepare canapes offering contrasting flavour combinations: porcini with parmesan and black truffle, beef tartar with truffle aioli and crispy potatoes, and truffle arancini. As an appetiser, I offer bluefin tuna crudo with avocado, crispy ginger and onion-truffle sauce. As a main dish, I bring to the table a rich and aromatic combination of beef fillet and short rib, Jerusalem artichoke and truffle juice. I prepare my best recipes from the freshest truffles and I am looking forward to enjoy the evening with you!
