As last year’s truffle dinner was highly praised by all the guests, Flavore will host it again! On October 10th at 19, all truffle gourmets and enthusiasts are invited to Ristorante Flavore for a unique five-course dinner featuring the most coveted mushrooms in the world – exquisite truffles!

This irresistible delicacy will be the star of the evening, appearing in appetisers, starters, and main courses, all prepared by two exceptionally talented chefs. One of them is the crown jewel of Ristorante Flavore, Head Chef Kārlis Rūdolfs Aiše. The other is Sergejs Siporovs, a chef arriving from Latvia specifically for this extraordinary event, who has honed his skills in Michelin-starred restaurants and currently works at Snatch, a restaurant distinguished with the Michelin Bib Gourmand award. Perfect wine pairings for the dishes will be curated by Bestwine’s sommelier, Juri Brattšik.

Karlis Rudolfs Aise

Kārlis Rūdolfs Aiše – Just as last year, my goal this time is to let truffles elevate seemingly simple ingredients to new heights. In my kitchen, I embrace the philosophy of “less is more,” celebrating each ingredient’s unique qualities and allowing them to shine even more brilliantly through the distinct character of truffles. For the first course, I will present a warm potato croquette accompanied by a light potato foam and notes of caramelised onion – a delightful play of textures and simple flavours that pairs wonderfully with truffles. Next, we have delicate scallops complemented by a caramelised cauliflower purée and fresh cauliflower, lightly charred to introduce a unique flavour profile. This dish is elevated to a perfect culinary experience with fresh black truffles. For dessert, we have a real treat for gourmands! We will give your taste buds a moment to rest from the intensity of truffles and take you back to a warm summer evening. Imagine the combination of strawberries and prosecco, with subtle hints of peach and basil – simply perfect!

Sergejs Siporovs

Sergejs Siporovs – I love using truffles in my dishes because of their strong aroma and delicious taste. In our restaurant, we use only the best quality truffles, which arrive directly from our supplier in Italy. At this year’s truffle dinner I will be preparing the antipasti, starting with delicate stracciatella, served on crispy pumpkin toast, drizzled with a vibrant white truffle vinaigrette for a perfect harmony of flavours and textures. My quail egg Florentine will offer a refined take on the classic — featuring quail egg, spinach, and a rich parmesan sauce on crostini, with a subtle touch of truffle to elevate the dish. For the starter, I will serve smoky grilled Japanese mushrooms, finished with a savoury ponzu sauce and deepened by the earthy richness of black truffle. As the main course, I will prepare soft ricotta dumplings accompanied by tender veal, all drizzled with black truffle vinaigrette and enriched by the nutty complexity of Comté cheese. I am confident these dishes will create a truffle dinner experience that guests will not soon forget.
